If there is one thing just about every family can use more of, it’s time. Today’s parents and kids are busier than ever with work schedules, school, sports and other extracurricular activities. With so much going on, there isn’t much time for family togetherness. One solution is to plan at least one meal a week where everyone can take part in the preparation. It’s a great way to have fun and connect with one another. Here is a terrific taco recipe the whole family will enjoy:

    1 lb. Lean ground beef or turkey
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1 clove chopped garlic
    1 cup tomato sauce
    1 tsp. Mexican chili powder
    1/2 tsp. Salt
    12 crisp or soft taco shells

Plus toppings: shredded cheese, shredded lettuce, salsa, chopped tomatoes, chopped black olives, sour cream, whatever you like!

Combine the first four ingredients in a large skillet and cook over medium heat for about 8 to 10 minutes, breaking the meat into lumps. When the meat is brown and the vegetables soft, drain off any fat in the pan. Add the next three ingredients and cook another 7 to 10 minutes until the mixture is thickened.

Warm the taco shells by following the package directions. In the meantime, assemble the toppings. When all is ready, gather the family around and allow each person to build their own Mexican masterpiece! Enjoy. (Makes 12 tacos)
